homemade apple pie

This morning was a beautiful autumn morning, with a slight chill in the air and a crispness that can only be felt during October. The moment I stepped outside to walk the dog, I had made up my mind about what I was going to do today. I made a quick shopping list on my phone, and headed to the grocery store.

Though it did wind up warming up quite a bit throughout the day today, I was still in the mood for homemade chili for dinner and homemade apple pie for dessert. Never mind the fact that Vin and I both ate pieces of pie long before dinner was ready.

I slaved away in the kitchen chopping up thin apple slices and plopping them into my pie. I wound up making two pies — one much uglier than the other (which we obviously dug into first in order to preserve the beauty of my second pie!). Here are the results. And just in case you were wondering, yes, I will be starting a pie business immediately. Also, if anyone is interested, I’d be more than happy to post the recipe I used.
